Recipes

So, I have decided to use my blog for something that I love as well as to inform those who may stumble upon it to help out with their cooking experiences. I LOVE to cook!!! I experiment with recipes and/or find a recipe that sounds like it would be good so I will make it.

Now there are times when I find a recipe and I do not have the exact ingredients so I will substitute. This blog will help with those substitutions, hopefully, and let you know if you have heard about a different way to make something, I may have tried it......therefore you will have a soundboard to use so that you may know if it was successful or if it tasted good.
Let's get started!

I wanted to make a carrot cake, but did not want to go through the hassle of making it entirely from scratch....plus I had two cans of carrots that I would not use as a vegetable. I went online and found this recipe that sounded good enough and I had all the ingredients:

EASY CARROT CAKE
1 (2 layer) yellow cake mix
1 1/4 c. Miracle Whip
4 eggs
1/4 c. cold water
2 tsp. cinnamon
2 c. carrots, finely shredded
1/2 c. walnuts, chopped
1 (16 oz.) tub vanilla ready-to-spread frosting
Combine cake mix, Miracle Whip, eggs, water and cinnamon, mixing at medium speed on electric mixer until well blended. Stir in carrots and walnuts. Pour into greased 13 x 9-inch pan. Bake at 350 degrees for 35 minutes, or until wooden pick inserted in center comes out clean. Cool. Spread frosting on top. Makes 12 servings

So, I whipped up the cake and threw in the canned carrots, using a potato masher to break apart the canned carrots enough that they were not whole in the cake. It smelled good when I was mixing everything together and it tasted fairly good. As an afterthought I had decided that it needed a bit more cinnamon, but the cake was already in the oven. Now it was moist enough and mixed well........


When it was done it looked very tasty and baked up
nicely. I let the cake cool and instead made my own frosting from scratch.

We waited until after dinner for our dessert then cut the cake.
It was really dense and did not raise too much. It was thick and very, very moist. In fact it was a little piece of "lead" cake. It did not taste BAD, it actually had a decent flavor, just needed more cinnamon, lol. But I could not get past the consistency of the cake.

I would not make this cake again. I also am not sure if it was the cake mix that was used instead of using individual ingredients or if it was the canned carrots, but I will not make this cake again.
